A couple of days ago I was posting a chia tea latte, snuggling under a blanket trying to keep warm. Today it’s over 90F and I’m making creamsicles. Do you remember creamsicles from your childhood? perhaps they weren’t called that in England where I grew up, but something very similar I’m sure and I loved them. These are so ridiculously easy to make and naturally the homemade version is way better for you than the original. The only thing you have to remember is that they need a good 6 -8 hours in the freezer to set properly. Looking ahead in my cooking and meal planning is something I’ve never quite got the hang of, I find it almost impossible to marinate a piece of fish or meat for a couple of hours in advance of cooking it. I’m very organized (in fact I may be a tad OCD) in my personal and business life but when it comes to the kitchen – it’s hopeless. Even so I did manage to get these into the freezer last night with the promise of extreme heat the next day – I was beyond proud of myself.
- 1½ cups vanilla greek yogurt
- 1 cup orange juice
- ⅓ cup pure maple syrup
- Mix all the ingredients together and pour into the popsicle molds. Freeze for 8 hours.
- To unmold, run the molds under hot water for 10-20 seconds.
- Enjoy immediately
