Hot chocolate has been adulterated in my view. The real thing should be deep, rich, nourishing and luxurious, definitely not something powdered out of a packet with a splash of hot water. This is a treat, for when the snow is falling or in this case it’s Christmas Eve and you’ve almost finished everything you have to do but need an extra little push to get you over the finish line. This is gloriously thick and chocolately, with a dollop of cashew cream swirled in for good measure. You don’t have to spice it up of course, your choice entirely.
8oz plant based milk
splash of vanilla extract
1 teaspoon cornstarch
2 tablespoons of best quality cocoa
2 teaspoons maple syrup – more or less depending on your sweet tooth
Pinch of cinnamon
Pinch of cardamon
Pinch of nutmeg
- whisk the cocoa and cornstarch together in a small bowl
- heat the milk with the maple syrup and spices to a simmer
- add a tablespoon or so of the milk mixture to the cocoa mixture and whisk together, then pour back into the warm milk. Bring to the boil, then simmer for a minute or two.
- pour into a tall mug, add some plant based cream if desired and a shaving of chocolate. Sip and enjoy, hopefully in peace.
