Chai Tea Latte

Serves: 1 large serving
  • For the tea
  • 8oz water
  • 1 heaped teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • 2 cardamon pods or ½ teaspoon ground cardamon
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground tumeric
  • 2 cloves sprigs - or ¼ teaspoon ground cloves
  • dash of maple syrup - depending on how sweet you like your tea
  • 1 black tea, tea bag - I used PG Tips
  • For the latte
  • 4oz almond milk
  • dash of maple syrup
  • Healthy pinch of cinnamon
  1. Bring the water, maple syrup if using and spices to a boil, allow to simmer for 2-3 minutes. Turn off the heat.
  2. Add the tea bag and allow to steep for 5-10 minutes. Pour through a fine strainer.
  3. Heat the almond milk, add the cinnamon and maple syrup. Bring to the boil, turn off the heat. Whisk with a wire whisk or an immersion blender (be careful you don't splatter yourself with milk!)
  4. Pour the tea into your favorite cup, top with the milk, perhaps sprinkle with a pinch more cinnamon.
  5. Curl up on the sofa with your thoughts, your favorite book or your furry friend if you're fortunate enough to have one.
