Chocolate Chip, Almond Butter, Oatmeal Cookie

Serves: 18 cookies
  • 1½ cups coconut sugar
  • ½ cup gluten free oats
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 teaspoon cinnamon
  • Approximately10 oz OR 1¼ cups creamy almond butter
  • 1 cup chocolate chips
  1. Heat the oven to 350 F
  2. Line a large baking sheet with parchment paper.
  3. In a large bowl add the coconut sugar, oats, eggs, vanilla extract, salt and cinnamon and mix together until thoroughly combined.
  4. Add the almond butter mix thoroughly until smooth.
  5. Add the chocolate chips, mix to combine.
  6. Place in the fridge and allow to chill for AT LEAST 30 MINUTES.
  7. Remove from the fridge and scoop into small rounds using a teaspoon. Don't overcrowd the baking sheet, leave about 1-2 inches of space around each cookie. Cook in batches and leave the remainder of the dough in the fridge until ready to bake.
  8. Bake for approximately 12-14 minutes.
  9. Remove from the oven, allow to cool for 5 minutes then gently move the cookies to a cooling rack.
  10. Enjoy.
