Ingredients
  • 2 cups old fashioned oats
  • 1½ cups raw almonds
  • 1 cup sunflower seeds
  • 1 cup hazelnuts
  • 1 cup pumpkin seeds
  • ⅔ cup almond oil OR canola oil
  • ⅓ cup maple syrup - or ¼ if you don't have a sweet tooth
  • Pinch of salt
  • ½ cup raisins
  • ½ cup dried apricots
  • ¼ cup chia seeds (optional)
  • ¼ cup hemp seeds (optional)
  • 1½ teaspoons ground cinnamon
  • Pinch of salt
Instructions
  1. Heat the oven to 250F
  2. Line a large baking tray with parchment paper, add the oats, nuts and seeds (except for the chia and hemp seeds if using) and combine.
  3. In a mixing bowl whisk together the oil, syrup, salt and cinnamon. Pour the liquid over the oat mixture and combine well using your hands, making sure all the oats, nuts and seeds are lightly coated with the liquid.
  4. Place into the oven and bake for 10 minutes (put the timer on). Remove from the oven and stir well, place back in the oven for a further 10 minutes. Remove from oven, stir again and return for a third 10 minutes.
  5. Remove from the oven, stir and add the dried fruit, and the chia and hemp seeds if using, bake for a further 8 minutes.
  6. Remove from the oven and allow to cool before pouring into an airtight container to store.
