A deliciously green vegan dressing.
1 cup fresh herbs loosely packed. I used basil, mint and oregano
1 tablespoon Dijon mustard
1 tablespoon maple syrup
1 1/2 teaspoon kosher salt
1/2 – 1 teaspoon freshly ground black pepper
1/2 a good sized avocado
Juice and zest of a good sized lemon, if the lemon is small you may need 2
1/4 cup olive oil
1/4 cup filtered water
Place all the ingredients in a high speed blender and blitz. Taste and add more salt, pepper, lemon juice if required. If the consistency is too thick add a little more oil and water. Taste again and tinker until you’re satisfied.
