1 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon kosher salt
1 teaspoon cinnamon
2 ripe bananas
3/4 cup sugar
1/3 cup canola oil
1 teaspoon vanilla extract
1/2 cup walnuts, coarsely chopped
1/2 cup dark chocolate chips
Pre heat the oven to 400F
Line a muffin tray with paper liners
Combine together the flour, baking soda, baking powder, salt and cinnamon in a large bowl.
Mash the bananas very well in a separate bowl and set aside.
In a third bowl whisk together the sugar, canola oil, applesauce and vanilla extract. Add the applesauce to the mix and combine.
Pour the wet ingredients into the dry and stir to combine, don’t over mix.
Add the chocolate chips and walnut pieces. Gently stir together.
Fill the lined muffin cups 3/4 full with the batter. Place in the oven and bake for approximately 15-18 minutes or until risen and golden. Please don’t over bake!
Remove from the oven, allow too cool for a few minutes then transfer the muffins to a baking rack to cool thoroughly. Enjoy.
