Vegan Cowboy Cookies

A deliciously healthy alternative to the classic.



2 cups oatmeal (old fashioned oats)

1 cup all purpose flour

1 cup almond meal

1/3 cup shredded coconut

1/2 teaspoon baking powder

1/2 teaspoon kosher salt

1/2 teaspoon cinnamon

1/2 cup coconut oil (melted)

1/4 cup olive oil

3/4 cup maple syrup

1 1/2 teaspoons vanilla extract

1/2 cup dark chocolate chips

1/2 cup coarsely chopped walnuts


  1. Preheat the oven to 350F. Line 2 baking trays with parchment paper.
  2. In a large bowl combine the oatmeal, flour, almond meal, shredded coconut, baking powder, salt and cinnamon.
  3. In another bowl whisk together the melted coconut oil, olive oil, maple syrup and vanilla extract. It should become emulsified.
  4. Pour the wet ingredients into the dry and mix to combine.
  5. Add the chocolate chips and walnuts and stir into the batter.
  6. Allow the batter to rest in the fridge for 10 minutes.
  7. Scoop the batter onto the lined baking trays with a rounded tablespoon.
  8. Bake for 15 minutes. The cookies may seem a little underdone but they will firm up while cooling.
  9. Remove from the oven. Allow to cool on the baking tray for a few minutes then transfer to a wire rack to cool completely.
