Vegan Rice Crispy Treats covered in chocolate 🙂
If you’re looking for a delicious vegan rice crispy treat recipe, this one is perfect! Especially if you’re a chocolate lover, because these vegan rice crispy treats are covered in chocolate! But it doesn’t stop there, this recipe also includes peanut butter and cinnamon, and it’s sweetened with only maple syrup.
This is what you make when you’re craving chocolate and peanut butter. These Rice Crispy Treats aren’t the gooey marshmallow originals. In my opinion they’re better, a little crisper with of course a layer of chocolate on top!
I think it’s nice to add a little vanilla and cinnamon for an extra hint of yumminess. Just a reminder, look for chocolate with a cacao content of 50% or more to make sure it’s vegan.
They’re super duper easy to whip up. Simply mix the:
- rice crispy’s (I used One Degree Sprouted Brown Rice Cacao Crisps click HERE for details)
- peanut butter
- maple syrup
- vanilla extract
- ground cinnamon
To make the chocolate topping mix:
- dark chocolate
- coconut oil
I like to add a little coconut oil with the chocolate for two reasons;
- it hardens faster – so you can eat them quicker:)
- it makes the mixture a little more luscious.
Line an 8 x 8 baking pan (click HERE for my favorite) with parchment paper. Chill them in the fridge for 30 minutes or so before pouring the gorgeous chocolate over the top. Return the pan to the fridge until set, approximately another 30 minutes, then they’re all yours! Ready to tuck in.Print
Vegan Rice Crispy Treats
2 1/2 cups One Degree Brown Rice Cacao Crisps Cereal or other brown rice cereal.
1/2 cup peanut butter or almond butter
1/4 cup maple syrup
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
For the topping:
4 oz dark chocolate
1 scant tablespoon coconut oil
Place the brown rice cereal in a large bowl.
Add the peanut OR almond butter, maple syrup, vanilla extract and cinnamon.
Stir well to combine.
Pour the mixture into a 8 x 8 inch baking pan lined with parchment paper. Press the mixture down with the back of a wooden spoon. Place into the fridge for at least 30 minutes to set.
To make the chocolate topping, combine the chocolate and coconut oil in a pan over a low heat until JUST melted. Stir well and don’t let it boil!
Pour the chocolate liquid over the chilled crispy treats, return to the fridge for another 20-30 until fully set.
Take out of the fridge, remove from the pan, cut into squares. These keep beautifully in the fridge for up to 5 days. A perfect treat with a cup of tea or coffee:)
